When we say fresh garlic, we are referring to whole bulbs. Here at Tierra de Barros Garlics we specialise in the violet spring variety, with its characteristic white skin with purple streaks. Before it can be prepared for sale, first the garlic has to be classified and sized. The members of the cooperative prepare the garlic manually by separating the bulbs that don’t meet the requirements of first-class produce, removing the outermost layers of skin and cutting off the scapes and roots. It is then sold in bulk – in 6, 10 or 20 kg, or in 20 or 30 lb boxes – or in mesh bags of varying shapes and sizes.
Peeled garlic is increasingly growing in demand. At Tierra de Barros Garlics we have responded by heavily investing in our peeled garlic machinery, renewing the entire peeling room in 2022 in order to boost production and improve the quality.
Peeled cloves of garlic must go through a number of steps before being packaged. First, the garlic bulb is split and the skin removed. Once we have done this, it goes through two sorting machines, which removes any cloves with visual defects, before then passing through the hands of our expert handlers, who remove any imperfections. Next, the cloves are placed in a tub, where they are disinfected, before undergoing a drying process. The peeled cloves are then ready to be packaged.
They are sold in a variety of package sizes: From 500 g and 1 kg bags, to tubs and jars weighing 1 kg to 5 lb, etc.
Since we aim to satisfy all our customers’ needs, we also produce garlic paste. Garlic paste is made by crushing and mincing our fresh garlic, with the finished product maintaining all the original properties of fresh garlic.
It is sold in tubs of 2, 5 or 10 kg.
